Insulin Reducing Tomato Soup Recipe

- 5 large tomatoes
- 2 green bell peppers
- Broccoli (1 head)
- Fresh herbs (Mint)
- 1 tablespoon of extra virgin olive oil
- Salt and pepper to taste
Cut the vegetables into small pieces and put them to boil. Fill the pot to cover the vegetables. Then add seasonings and olive oil. Cook for about 15 minutes.
Add fresh herb of your choice and serve.
