Hulk Soup (Fitter Food, a second helping)

Serves : 8


  • 2 tbsp coconut oil
  • 4 cloves garlic, chopped
  • 2 cubes fresh ginger (dice size), chopped
  • 1 onion peeled and chopped
  • 4 leeks, chopped
  • 600g frozen peas
  • 4 courgettes, chopped
  • 1 whole broccoli head, chopped
  • 250g green beans, chopped
  • 1 handful fresh mint
  • 800ml bone broth or vegetable stock
  • Sea salt & ground black pepper to taste
  • 1 large bag spinach
  • 5 tbsp green pesto


Heat the coconut oil in a large saucepan and add garlic, ginger, onion and leeks. Cook for a couple of minutes stirring occasionally. Next, add peas, courgettes, broccoli, green beans and mint – stirring before adding the broth/stock, salt and pepper. Bring to the boil then simmer for 25 minutes or until the vegetables are cooked, stirring occasionally. The broth/stock should cover all of the vegetables. Add the spinach and stir to wilt down before using s stick blender to mix ingredients together.

Taste and add more flavouring if required (salt/pepper). If too thick, add more stock or water.
