Apple Scotch Eggs

ServesServes 4  (double for extra portions!)


  • 4 eggs, hard-boiled
  • 500g pork mince
  • 1 apple, peeled and grated
  • 1 tablespoon dried sage
  • 1 tablespoon Mediterranean dried herbs


In a mixing bowl, thoroughly mix all the ingredients except the eggs. Divide the mixture into four equal size portions. Lay out large piece of greaseproof paper. Using hands flatten out the mince portion. Place egg in the middle and using the greaseproof paper roll mince around the egg. Shape into a ball using hands. Repeat until you have made 4 large scotch eggs. Place on non-stick baking tray. Cook in oven on 160°C / 325°F. Bake for 30 minutes. Turn after 15 minutes.
