Balsamic Dressing

Serves : makes a large portion, so you can keep this in your fridge to use through the week

Ingredients

  • 1 cup extra virgin olive oil (cold pressed)
  • ⅓ cup good quality aged balsamic vinegar
  • 1 Tbs. dried parsley
  • ½ tsp. sea salt.
  • Freshly ground pepper to taste
  • 1 Tbs. honey mustard
  • 1 garlic clove, minced (optional)

Directions

Add all ingredients into a bowl & whisk until thick and creamy.

Check for seasoning.

 

Apple Cider Vinegar Dressing

Keep a bottle of this in the fridge at all times!

Ingredients

  • 1 cup extra virgin olive oil (preferably first cold pressed)
  • ½ cup of Apple Cider Vinegar
  • 1 tsp. dried Onion Powder
  • 2 Tbs. of Dijon Mustard
  • 2 garlic cloves, minced (optional)
  • ½ tsp. Sea Salt
  • ½ tsp. of dried Thyme
  • ½ tsp. of dried Basil
  • Freshly ground pepper to taste

Directions

Add all ingredients into a bowl and whisk until thoroughly combined.

Check for seasoning.

Paleo Mayo

Ingredients

  • 3 pasteurized large eggs
  • 1.5 tsp. dry mustard
  • 1 tsp. kosher or sea salt (preferably Himalayan)
  • 1/4 cup fresh lemon juice
  • 1 small garlic clove, peeled
  • 1 cup coconut oil
  • 1/2 cup extra virgin olive oil
  • 1/2 cup fresh basil chopped

Directions

Combine the two oils in a small bowl and set aside.

Put the eggs, mustard, salt, and lemon juice into blender and process 10 seconds to mix. While machine is running, drop in peeled garlic clove.

Very slowly pour the mixed oils into blender while running.  Process until all of the oil is incorporated. Mixture will be the consistency of mayonnaise.

Add chopped basil & stir to combine.  Refrigerate for 1 hour before using.
